Corn Medley

Ingredients:
4-6 slices bacon diced
1 small onion diced
½ bell pepper chopped
1 ½ lb frozen corn
1 small can sliced mushrooms
½ teaspoon season all to taste
1 small jar pimientos

In a large deep frying pan, fry diced bacon until crispy, remove bacon bits.

Add all other ingredients and cook, covered, over medium flame, about 15-20 minutes, stirring twice.

When corn is done, add bacon bits, stir and serve immediately

SuzzieQ: Corn Medley is a wonderful dish that can accompany any entree. The blend
of ingredients and colors are full of flavor and very attractive. Biting into a bacon
bit is an extra pleasure! I used 7 ears of fresh corn....blanched the cobs, cooled
them, then cut it off the cob. Using fresh corn was worth the extra effort. Also, I
drained off some of the bacon grease before adding the corn mixture into the pan
(watching the fat grams). Thanks 'imagi' for this contribution!!
