Ultimate Mexican Rice

Ingredients:
1 large Spanish onion
About 6 cloves of fresh garlic
1 tbs Chili Powder
2 cans Beef Consommé
1 cup (or can) rice
Enough bacon to yield 3 tbs. of bacon grease
 

Preheat oven to 350 degrees F.
Fry the bacon in a Dutch oven. Slice onion and cut slices in half. Slice garlic.
Add the onion pieces to the pan and simmer on medium until transparent.
Add the garlic, and stir for 1 minute.
Add the Chili Powder and stir...add the rice...stir until evenly coated.
Add 2 cups (or cans) of consommé, and turn stove to high.

When mixture is boiling, transfer to oven.
Stir every 20 minutes; bake for 90 minutes.

SuzzieQ-- This is perhaps the best rice dish I've ever had. I fix it frequently. It is easy. The chili powder, bacon grease and beef consume give it a unique flavor that I've never tasted in any other rice dish. Ohh...and the garlic--yummy!!
